Satsumas a typically very sweet and usually seedless. One of the distinguishing features of the satsuma is it peels very easily. They can be used in salads and go well with fennel, blue cheese and other bold flavors where the sweet citrus note provides a tempering aspect. Satsumas also go well in jellies and preserves.
